Real world latency is almost identical between the two, around 12.9 nanoseconds against 12.7. The 6000 kit wins on bandwidth. The 5600 kit is usually cheaper and, at 64GB, tends to be easier for a motherboard to train first time. Neither is clearly better, so buy on price and availability.
